3 Recipes; Chicken Stew, Stroganoff Oven Baked Steak, Southwest Chicken Tribute to Church Basement Ladies

  1. Grandma Milani’s Chicken Stew
Ingredients

1  16  oz can cream of chicken soup, or the big can

1        standard size, about 8 oz cream of mushroom soup

1 cup or so whole milk

1-2 TBSP flour

1-2 TBSP butter

Olive oil

Cut up chicken breast

Salt and pepper

Dill

Chopped or dried onions

Chopped fresh, canned, or frozen vegetables like carrots, peas, green beans


Brown the chicken in olive oil with a pat of butter melted in it.  Salt, pepper, and add dill.  Brown with chopped onions, green onions, or dried onions.

In a Dutch oven or large pot, add two cans of soup and milk; stir.  In a small frying pan, combine flour and butter together to make paste or roux.  Add a little milk to thin it, then stir gently into the soup mixture.  I also like to add about a quarter cup of any cooking wine or sherry, even nonalcoholic glogg from Aldi works, or the German Christmas wine, Gluweinn.

When chicken is browned, drain and add to soup mixture.  Add vegetables.  Put pot in the oven, about 350 degrees or so, and bake it about 30-40 minutes.  Watch it and take out if it cooks sooner.  You could also cook it on the stove top, bring to a boil first, then simmer for about 30 -40 minutes on lower heat.


Stroganoff oven baked steak with mushrooms

Ingredients

1 package thin sliced breakfast steak or flank steak, or fajita cut beef steak.

1 package fresh mushrooms

1 small can mushroom steak gravy

1 can Campbell’s beefy mushroom soup

¼ cup cooking wine

Salt, pepper, dill

Sliced onions, green onions, onion powder or onion flakes

About ½ cup sour cream


Brown thin steak; you can bake it with the liquid ingredients, but it works out better if browned a little.  Brown in olive oil and a pat of butter. Set aside.

In a baking pan sprayed with cooking spray, combine can of gravy, beefy mushroom soup, cooking wine, and sour cream.    Add the fresh mushrooms, sliced. Add the beef.

Bake at about 375 degrees or so, maybe closer to 400.  Bake 35 minutes.

Good served over mashed potatoes or wide egg noodles with a green, leafy salad.

Southwest Casserole; a Tribute to Church Basement Ladies

6 oz sour cream

6 oz salsa, any brand, mild or hot

2-3 cut up chicken breasts; you could also used canned or baked chicken, no skin

Cooking spray

Vegetables as desired, especially cut up peppers of various types; I used red and yellow peppers cut in strips.

Add milk as needed to make a sort of gravy or some water.


Combine all ingredients.  Bake at about 374 degrees for 45 minutes or until chicken is done.  If you use canned or baked chicken, it will take maybe 25 minutes.  Serve over white rice, or rice noodles, pasta, egg noodles, or serve in bowls with corn or flower tortillas.
